The history of the brewery dates back to 1457. Production ceased in the second half of the 20th century and the brewery was rebuilt and reopened in 1990. Today, Hubertus beer is brewed here and can be tasted in pubs all over the country.

It is stated that the first mention of the Kácov brewery dates back to 1457, when Kácov was owned by the Košíns of Košíně. This was at a time when the right of the serfs to brew beer for their own use and for sale was beginning to be restricted and this privilege was usurped by the nobility. That is why the brewery in Kácov is one of the oldest in Bohemia. Here, too, the owners of the manor forced the serfs to take beer from the manor brewery. Those who did not respect this order were punished and fined. Thus, in 1699, Václav Hájek, the town crier, cut up barrels of beer from Čestín for Jan Písecký of Zderadin on the bridge. The obligation to take only beverages produced by the nobility ended in 1784 under Joseph II.

The fate of the Kácov brewery coincides with that of the owners of the town. The brewery was one of the basic elements of the local economy alongside the ash yard, mill and wine cellar. The last owner of the brewery in Kákovy before it was nationalised after the First World War was Charles I, Emperor of Austria. Beer production in Kácov was gradually reduced and finally stopped in 1957. The building was then used for other purposes.

After 1990, the building was rebuilt with a new purpose (beer hotel) and beer production started again for a short time. In 2002, the Prague-based company DAVEP finally resumed production here, returning to the classic name of the local beer Hubertus (meaning bright spirit, great mind). In 2013, the company was transformed into a joint stock company Hubertus a.s.

The core of the buildings of the Károvo brewery dates back to the nineteenth century. The main attraction of the Kákovy brewery are the cellars partially sunk into the hillside below the square. Thanks to these cellars, the brewery is listed as a technical monument.
